ripe banana

tablespoons buttermilk

tablespoons vegetable oil

cup Betty Crocker™ Bisquick™ Pancake & Baking Mix Original

cup brown sugar

teaspoon baking powder
1/4
chopped walnuts, plus more for garnish
1/4
teaspoon cinnamon
Whipped cream (optional)
Steps
- 1In a medium bowl, mash banana with a fork. Add buttermilk, oil and egg; mix to combine.
- 2Add Bisquick™ mix, brown sugar, baking powder, 1/4 cup chopped walnuts and cinnamon. Mix until well combined.
- 3Divide batter between 2 coffee mugs.
- 4Microwave for about 2 minutes, or until the edges of the top is try and the edges of the banana bread have pulled away from the sides of the mug. Do not overcook; the banana bread will continue to cook a bit after you take it out of the microwave.
- 5Cool slightly. Serve topped whipped cream and more chopped walnuts, if desired.
