10-MINUTE LIME PIE

INGREDIENTS

    • 2 (14 ounce) cans sweetened condensed milk
    • 1 pint heavy cream
    • 3/4 cup lime juice, plus
    • 1 tablespoon lime zest, from 8 limes
    • 70 Ritz crackers ( about 35 crackers per sleeve)

DIRECTIONS

  1. Combine condensed milk and heavy cream in a large bowl.
  2. Add lime juice and whisk until thickened, about 1 minute.
  3. Spread 1 cup filling on bottom of deep-dish pie plate.
  4. Top with single layer of Ritz crackers.
