Lemon Cheesecake Bars


Ingredients

    • 1 (18 ounce) boxes yellow cake mix ( with pudding in the mix)
    • 2 large eggs
    • 1/3 cup vegetable oil
    • 8 ounces cream cheese, softened
    • 1/3 cup sugar
    • 1 teaspoon fresh lemon juice

Directions

  1. Preheat oven to 350Ā°.
  2. Mix dry cake mix, 1 egg and oil until crumbly.
  3. Reserve 1 cup and pat remaining mixture into a 9 x 13 inch pan.
  4. Bake for 15 minutes.
  5. Beat cream cheese, sugar, lemon juice and 1 egg until light and smooth.
  6. Spread over baked layer and sprinkle with reserved crumb mixture.
  7. Bake for 15 minutes more.
  8. Cool completely and cut into bars.
  9. Store in refrigerator.
