Mexican Corn Salad

Ingredients

    • 1 (16 ounce) packages frozen corn, thawed
    • 1/2 cup finely chopped fresh cilantro
    • 1/2 cup finely chopped red onion
    • 1/4 cup fresh lime juice
    • 2 tablespoons minced and seeded jalapenos ( about 1 large)
    • 1 tablespoon olive oil
    • 1/2 teaspoon salt
    • 1/4 teaspoon cumin
    • 1/4 teaspoon chili powder
    • 1/4 teaspoon black pepper
    • 2 garlic cloves, minced

Directions

  1. Combine all ingredients in a bowl and toss well.
  2. Cover and chill approximately 8 hours.
  3. Stir well before serving.
